Praline: The Caramelised Sweetness of Perfume

In perfume, praline is a gourmand accord that evokes nuts coated in caramelised sugar: toasted hazelnut, caramel and vanilla. Entirely man-made, it has become one of the signatures of modern gourmand fragrances.

What does Praline smell like?

Praline smells of cooked sugar, toasted hazelnut and almond, with a blond caramel facet and a vanilla softness. Some accords lean toward nougat or chocolate spread, others toward a darker, almost burnt caramel. On skin it develops in the base, warm and enveloping, leaving a sweet trail that can last a very long time on skin and fabric. It is sweetness with a crunch.

Origin and production

Praline does not exist as an essential oil: it is an accord built by the perfumer. It typically combines ethyl maltol for the cooked-sugar effect, vanillin and ethyl vanillin, hazelnut notes and toasted pyrazines, sometimes with creamy lactones. The gourmand genre was born in 1992 with Mugler's Angel, and praline later became one of its most popular expressions. Its success has not faded since.

How perfumers use it

Praline sits in the base, sometimes the heart, adding sweetness and staying power. It pairs with vanilla, patchouli, orris, red berries and coffee. Lancôme's La Vie Est Belle sets it beside orris and patchouli, La Nuit Trésor blends it with black rose and coffee, and By Kilian's Angels' Share lays it beneath an accord of cognac and cinnamon. The result is indulgent and long-lasting.

How to wear it

Best in autumn and winter, praline suits lovers of sweet, comforting gourmand scents with a generous trail.

Frequently asked questions

What does praline smell like in perfume?

It smells of caramelised sugar, toasted hazelnut and almond, with a vanilla softness. Depending on the accord, it can suggest nougat, blond caramel or a darker praliné. In the base it gives a warm, sweet, comforting feel that lasts a long time.

Is praline in perfume natural?

No, it is an accord. No natural material smells directly of praline. Perfumers assemble it from molecules such as ethyl maltol, vanillin, hazelnut notes and toasted pyrazines. Each house therefore composes its own praline, more or less caramelised or milky depending on the style.

Which famous perfumes contain praline?

Lancôme's La Vie Est Belle made it one of its signatures, alongside orris. It also appears in Lancôme's La Nuit Trésor, Ariana Grande's Cloud, By Kilian's Angels' Share, and Parfums de Marly's Haltane and Althair, where it warms the base.
